Why Grind Size Matters More Than You Think

Grind size is one of the most important variables in coffee brewing because it controls how quickly water extracts flavor from the coffee.
Finer grounds expose more surface area to water, allowing extraction to happen faster. This is why espresso normally uses a fine grind. Coarser coffee extracts more slowly and is better suited to longer brewing methods such as French press or cold brew.
When the grind is too coarse for your brewing method, the coffee may taste thin, sour or underdeveloped. When it is too fine, the cup can become bitter, dry or overly heavy.
The ideal grind is not simply a fixed number. Different beans, roast levels and even changes in humidity can affect how coffee behaves.
This is why adjustable grinders are so useful. Rather than changing several variables at once, adjust the grind gradually and taste the result.
A small change can make a surprisingly large difference. Learning to control grind size is one of the easiest ways to move from simply making coffee to intentionally shaping how your coffee tastes.
